If i place Undine enemies and change the skin to Gorn will the kills be recorded as Gorn kills? I am tryn to make a Gorn grind mission.

No, they still count as Undine. Reskinning them only changes its appearance, not its weapons, abilities, or allegiance.

Ok I play an Orion and need 500 Gorn kills how can I create a mission to kill my own faction like Gorn or even Orions

I don't think you can. Everyone in your faction is friendly to you and it's hard coded into the game.
