There's a list of debuffs for the various damage types. It doesn't have antiproton up yet but the % chance on that one is a chance for it to go straight through shields to hull.

As for the torps:
Photon: low impact damage, 6 second cooldown
Quantum: High impact damage, 8 second cooldown
Transphasic: average damage. does 50% damage to shields instead of the usual 25% which also doubles the bleedthrough.
Chroniton: Chance to kill enemy engines.
Plasma: chance to apply a sizeable damage over time effect. When used with the High Yield ability it produces a large torp that can be shot out of the sky. Not adviseable.
Tricobalt Device: not technically a torpedo so it can't be used with high yield, however it's normal fire does at least 4 times as much damage as any other torpedo as well as AOE damage. This thing is a monster. But it can be shot out of the sky and has a 1 minute cooldown.
