Tactical captains have an ability called 'tactical initiative'. It recools all tactical bridge officer abilities faster. In a science ship you will have 2 or 3 of those, same for cruiser. In an escort you will have 7 or 8.
Escorts also have the best ability to do burst damage, more damage in the first 5 seconds, but pausing to refire so same damage over a 10 second period. Tactical captains have the best abilities to enhance that burst damage to kill most enemies in 5 seconds when fully buffed. (I have seen good tactical captains take out a borg cube in 5 seconds solo, but if it takes much longer they get in trouble quick.) An engineer in a cruiser can tank a cube forever, but will take longer to kill it. Which do you prefer?

Eventually many of us try all 3 professions. New changes coming will allow you to change from science ship to cruiser to escort without penalty.
