Science in an escort can be pretty brutal. Sensor scan and subnuc both work well with the escorts raw DPS.

Regarding escorts, the Defiant can be made to look decidedly "unstarfleet", and could almost look like a clipped Romulan Bird of Prey with the right setup, and it's got the cloak. Romulans love cloaking!
