You can't have a single instance and still have both the graphics we have and the interactive play we have. If they got rid of all customization and put people in set ships, and made the combat consist of "you pass an order to the ship and in a few seconds it starts performing that order on its own", then yeah, they could get rid of instances. But then this would be EVE. There already is an EVE; we don't need two. EVE's a fine game, but it's totally different than THIS game.
