One thing about huge text and choices that can make it easy though, is right from the Bioware book of the original Kotor.
Write dialogs in response that you can use for multiple choices. Sure, some captain choices are rude show stoppers, others... are fluff. Captain can go from A to B and pick anything he wants, he still goes A to B. It takes creative writing from time to time, but, again it is a thing I find entertaining.
