Is there any way at all that you can have your character viewed using your Starfleet uniform INSTEAD of the fancy pants armor look you have when you've got armor on?

Right click the armor and you can hide it.

You sure can! push K on your keypad....then click your character that shows your armor, kit, weapons...right click on your armor and kit and a drop down will give you an option to hide it.

I guess I've been running around just shooting anything that moves too much to really realize this simple solution.

yes, right click it the armor and select hide. Now it should show just your uniform.
