I just add more minions to make a more challenging encounter. A fighter group or a frigate group in space can notch up the difficulty of a fight nicely.

Of course you have to realize, the skill level of players varies widely. What may be a trivial encounter for some people may be incredibly frustrating for others.

That has its place, but there are times when you (general you) just want one challenging enemy as a focal point.
