So I just started playing thanks to the F2P thing and LOVE the game. I just hit Lieutenant Commander and got my new ship. I had previously purchased the original Enterprise from the C-store so when I got my new ship, I moved the blue phasers over.

I've read in several places on here that canons trump beam weapons for damage in end game content, but my question relates specifically to the journey TO end game content. While leveling, should I just stick with the blue beams since they level with me, or should I start using canons to get used to that playstyle?

I suggest you not only keep the blue phasers, but that you delete your connie and get a free new one to get more blue phasers and fill out your weapon slots as you level. Just remember its really only good for leveling, at 50 you will need different weapons.

It depends on the ship you fly, and the bridge officer powers of course.
Some are for beams only, some for cannons & turrets(count as cannons) and some for projectiles (torpedoes & mines).

For quick turning ship like the escorts cannons are a better match.
As you level up you will find that cruisers and sci ships to a lesser extent turn slower and slower. Beams are preferred here because of their wide fire arc (hover over the weapon tray icon to see it).

Turrets are good for escorts too, especially in the rear slots, can give you that last little bit of bite to kill an enemy ship. Well at least that has been my experience using raptors, and BoP ships with my Kingon.

Now on to semantics, first off the wider the arc the less the damage.
IIRC it breaks down like this:
-Turrets have 360 degree arcs.
-Beam Arrays have 250 degree arcs.
-Single Cannons have 180 degree arcs.
-Dual Beam Banks and Torpedoes have 90 degree arcs.
-Dual, Dual Heavy, and quad cannons have arcs of 45 degrees.
-Mine Launchers lack a real firing arc since they're aft only deployed weapons.

Feel free to correct if you see an error, but I checked my facts which are backed by memory.

You haven't told us what kind of ship you moved to. Disregarding what class your character is (it doesn't matter what kind of ship you fly if you're Engineer, Tactical, or Science.) What kind of ships are you focused on? With Tactical ships it's a good idea to focus on turrets, cannons (especially dual/dual heavies), and Torpedoes. With Science ships and Cruisers, but especially Cruisers focus on beam arrays, and maybe single cannons, with torpedoes saved for the hard smack when shields go down. Dual Beam Banks, Single Cannons, and Mines can be useful on all ships, depending on your play style.

Sorry, I must have cut that sentence. I got the LCom escort.

I tried out the cannons and turret last night and love it. Have 2xphoton cannons and a dual beam photon on front and a photon turret on aft with two +photon damage consoles. Trained one of my tactical boffs with cannon spread fire and the other with beam fire at will and it was a bit silly. I was blowing stuff up left and right in Starbase 24. The cannons really fit a hit and run playstyle well, but on the few chances I got to let somebody else soak up all the damage and I could just sit there and unload, it did great sustained damage as well.
