query them for what pecan pie might be and watch there eyes become child like
roasted peppers and lemons.. excite the pallet..
skim fat from juices
mix ina roux fluff up stuffing
w onion and celery
or PArsnip and a nice French licorice relative to celery endive apple mushroom
chicken stock 5 twist of pepper grinder hand full of salt dash in to taste..
give the bird a basting of a port cherry on skin gives a nice mahogany like look
