How does it work exactly? Ftrom what Ive seen, it looks like every person added adds that many more ships to the encounter. IF thats the case, then does adding more people add more xp overall? If so, how much?

From what I've seen about experience from killing guys is that the experience is greater for grouping. Each ship has a certain number of experience points per ship and those are divided between the people in the group based on their level.
If two guys in a group kill a guy worth 10 points they'll both get 5 I think. I might use a more complex formula where it bumps it up so that each person receives 6 points or some derivative. It also seems to round up.
In a group you will face more enemies and kill them faster, thus more experience. You probably will also die more (stupid romulans T.T ), but you'll get experience despite being dead so thats not a problem.
you get very little xp from kill to be honest, 1or2 skill points or a couple of BO skill points Vs a couple of hundred for mission completion
1-2 Skill Points? Mate, you need to stop fighting things 6 levels and lower below you. Keep moving forward and you'll find, like I am right now, that I am getting 7-13 skill points per kill. Of course, my targets are 0 to +3 to my level.
