My favorite is easily the maroon TWOK-forward uniforms. They're the most reminiscent of an actual military uniform. As a result, my uniform (which I've tried to make reminiscent of Battlestar Galactica and several real-world Navies) is based on this uniform. I'll post pictures when I get home from work.
After that, my favorite are the TNG movie/Season 5+ DS9 uniforms with the gray ribbed shoulders. Less militaristic than TWOK, but a runner up in aesthetics for me.
My favorite Star Trek uniform is the ST 2-6 movie uniform. It looks the most professional military to me. After that comes the DS9 uniform followed closely by the Voyager uniform.

Seems like the more "military" style uniforms are winning the favorite costume feedback race:
1. Star Trek II-VI Military Style Burgundy Jacket
followed closely by
2. Deep Space Nine / First Contact - Nemesis: Black with Grey Ribbed Shoulders motif.
The "burgundy" jacket is awesome looking when commanding a starship - but probably not to practical when on an away team mission - rolling around and such
The "DS9" military style is probably the most universal for both command and combat situations - in terms of overall universal style IMO.
