I'm just curious what you guys think about combat during warp speed and how it's possible? Can't recall if the other Trek's showed it but in Enterprise they were firing in Warp speed and also moving vertical. Maybe it was because it was such "low" warp speeds, under 5? Or are there no good reasons?

I recall in TOS that they would go to "warp" but as we know Warp speed back in the TOS era was not what it's like in TNG but I do remember Kirk giving orders for warp speed while in combat with the Klingons.
It is possible to fire at Warp speeds - Voyager certainly did so when travelling at warp speeds but under the use of slipstream drive (in the episode where an alien ship masked as Federation attempted to lure the Voyager crew back to Borg space)
Indeed, most of TOS' combat was under "warp" (the M5 computer episode shpows this very well, even firing torpedos and firing phasers upto warp 5).
The technical manuals go into some detail about this, but without getting too nerdy on you the short answer is yes, it's possible. It is one of the main reasons for ships to carry torpedoes, because they can travel at FTL speeds easier than energy weapons (supposedly). In TNG the Enterprise used Torpedoes almost exclusively while at warp, but all the shows have shown phasers used as well. Since phasers are not the same as lasers, they are not necessarily limited to the speed of light.
Of course the real answer is that the writers are not always up to speed on the sci-fi physics that some guy just made up.

and dont forget when The Enterprise D fired at the Borg Cube when they were at warp.
