Spotted a female Pakled on ESD couple days ago, wearing a pink off-duty dress even.
Personally I've leveled a female Ferengi Science Officer to Ensign 8; the species was cheap and I kinda like the Ferengi after having watched a couple seasons of DS9 recently. Doubt I'll be playing it much more though, always feels odd playing a female char for some reason.

Since I reactivated my account earlier this week, I've made it a habit to check out virtually all captains around to see what race they are. Flyin' to a star system? Let it go on auto-pilot while I investigate my fellow Federation officers.
And there's basically just craploads of humans and liberated borg humans, Vulcans, Trill (both joined and regular), Furries, "Aliens" (which range from the HUR HUR, I'm 9 foot tall and pink to Cardassians and Romulans), and a healthy dose of Betazoids follow up on the noticeably popular races.
After that, though, there's an OK amount of Bajorans, Andorians, and Fed Klingons making up a sorta middle-popularity tier... and after that everything else seems to drop off into nothing. I've seen:
1 Bolian (a female to boot)
1 Saurian (and I'm that Saurian!)
Have yet to see a single Pakled or Rigellian.
I do take a small measure in pride that I'm one of the few Saurians out there. Power to the space lizards.
Huh. I would've thought there'd be more Bolians. Though now that I think about it, I don't see them often either.
I had a Pakled. Deleted it because they're not Pakled enough (too thin).
I think my next new character will be Rigelian.
I have a Lt. Commander 7 or 8 Ferengi Science officer.
I havea Commander level Bolian. Who's also a top level diplomat. I created him specifically to do diplomacy with and am trying to level him to cap with minimal actual combat. (I.E. just do featured episodes, and diplomacy grind with him).
I have zero evidence to back this up, but I think Human males and Trill females are the most common characters I've seen.
I wonder if the Star Trek fan population is trying to tell us something. This is sort of like how the most common interracial marriage paring in the US is White male-Asian Female, followed by Black male-White Female.
I read character bio while waiting for STFs, and while crossing the space lanes too. I like to see other people's ideas for a character concept. Sometimes it gives me more ideas too!
Now that I have share those off-topic comments, back to what I was going to share:
My primary Fed character is a female Saurian Tactical officer. Her name is Voru. Please look her up and read her bio. I love hearing what people think about her, both good and bad. I think of that feedback as actual interactions that she experiences, and use it to futher refine her personality and reactions. All part of the Role-Playing! Also, it you have any feedback on my other characters, please send that too.
I use a Female Rigelian Science officer on Tribble to test foundry missions. It is interesting. I will have to make a more perminant one on Holodeck one day.
I am going to start a female Pakled Medic sometime. I have started one, deleted it, started it again, then deleted it. I just have to get off my duff and grind her up to VA so that she can help out on STFs.
