2 Questions about what damage type or types borg do, for both ground and space?
What is best damage type to do against borg? As in whats there weakest resist?

Well, their weakest resist is [BORG]. In all seriousness, your best pick is something you're not using on your other slot. Polaron and Tet are both good, A lot of people swear by Antiproton. Plasma can be decent for the DOT effect, and the CRM2000, Proton Rifle, and TR116 are all viable choices.

Just make sure you split between different energy types on the ground, or they'll adapt to both your weapons in one go.

As I recall they deal plasma in space, but this may have been changed to antiproton, I'm not 100% sure. As for Space resists, it really doesn't matter. There isn't a single weak spot, aside from the [BORG] modifier.

In Space the Borg deal two kinds of damage, Plasma and Anti Proton.
The main beam attacks they use are Plasma with the torpedoes also being Plasma based. Any Plasma resist you use will help against bot the beams and the DoTs from torpedoes which seem to stack and can quickly get out of hand.
They also use a cutting beam, you can tell which is which as it's a red colour and tears your hull to shreds. It seems to completely bypass shields and on Elite can hit for over 3k per pulse so it's good to get away from it if you can.

On the ground it's AP and Plasma again. All the Energy weapons the Borg NPCs use are Plasma with only Rebecca and Armek using AP for the chain attacks.

For equipment there's no energy type that will help against the Borg more than any other. I like AP with my Tac/ Defiant R for the extra critical severity from the DHCs but I also use Phasers with my Sci and don't notice a huge difference. Getting the STF weapons from DS9 is helpful, especially if you can get the Mk XII drops as very rare Mk XII isn't readily available from any other source.
They do seem to be a little better with Cannons than Beams however as the higher firing rate with CRF gives more chances for a proc; the Torpedoes are just a flat 1000 extra damage with every hit so they're worth using for STFs as it's free damage with every torpedo.

Do not use the proton gun, ever.
There is a good risk that your attack can chain off and hit friendlies.
Especially if members of your team are using mind control powers to turn them against their comrades.

Would you say to try and "resist" with Plasma and Antiproton modules ( if there is even module that have both resists ) or go all plasma resists with maybe one or two antiproton as seperate?

I have got myself familiar with space STF's on normal and with the retro borg set 3/4 im finding them really easy with my build which is escort all damage and tank maxed out with a couple of wild cards thrown in.

So think im almost ready for Elite STF's just tweaking a few things. Going to try Ground Normal first though.

The only resistance console I use is Neutronium; it gives an all energy resistance buff as well as Kinetic which can take the edge off the torpedoes, assuming they don't just one shot you. If you want a Plasma/ AP specific console then I believe you'd need the Tetraburnium hull plating console. It won't give a huge resist (IIRC it +32 at Mk X) but it should take the edge off the energy attacks.
It might be worth picking up cheap Mk X common consoles and trying the different console configurations to see which give you the most resistance, Mk X common should be very cheap and give you a good idea of what's going to work best. I'd definitely look into some Kinetic resistance if you intend to run Elite STFs though as the torpedoes hit very hard, even through shields.

Yeah thats pretty much what im using at the moment, kinetic and all damage resists, mk 10 blue's. Im working on maxing out crafting now to maybe get mk 11 stuff. So thats Kinetic Primary then, plasma secondary and if possible antiproton as third. Im currently using fleet escort but I am thinking of getting the Defiant Retro Fit, not sure yet. Fleet escort gives me more survivability with the extra ensign eng station and more crew but I really love the Defiant lol.
