Ultimately, this comes down to one thing... PLAY STYLE...
Instead of relying on the decisions of other people, you should just try the different ships and see what you like the best...
For my own preferences, I prefer to choose targets carefully and snipe at long distances, then close for a finishing torpedo attack. Cruisers are the best match for this style of play. I adopt to Science ships well, (and treat them as a 'light' Cruiser) but cannon armed escorts is something I couldn't adjust to, (as I die far too often) and end up generating for DPS using beam arrays instead of cannons...
for particular Cruisers, my main just switched over to a Odyssey, replacing a very high mileage Excelsior refit (which sacrifices some hull strength for increased firepower and maneuverability)

I like to kite mobs along while blasting or using CC control powers for holds, drains, and slows. Cruisers just aren't fast enough nor have the stations for that kind of play, so I stick to Escorts and Sci Ships.
I have a DSSV with Tractor Beams, Grav Well, PSW, and TBRs. I get a kick out of pushing bad guys into clumps during an STF so that my AOE Escort buddy can blast them all at once, but you may not enjoy that kind of thing.
Pay attention to how you play and what you enjoy. Then look at the ship and Boff stations that will help you rock that playstyle.

Alll of my previous ships were Science, as I've always liked the sub-system targeting capability, although am currently using an Odyssey Science Cruiser which lacks said capability.

After slumming around in a Miranda for 10 levels, an escort can be fast enough that it's hard to handle. On the bright side, these days you'll be in an Akira or better by the time you run into Romulans, you used to hit that in tier 2.
On a related note, I have an odd way of picking ships: It has more to do with the computer I'm on than what I'm doing. On my desktop at home, it's my MVAE. But on my work laptop, the resolution is low, the framerate is shaky, and the mouse is a piece of crap. There, it's my 8-beam Excelsior.
Well....I've spent the last 20 levels (Just hit VA today!! ) I've had a go with my friends Defiant to see if I could get used to it. Still too "twitchy" for me as just like to stroll around and shoot beams all over the place.
So I guess I have found my playstyle.
Now to just decide on which ship to buy....I have the CP's, and I have the Dil to kit it out for STF's. Maybe should even find a fleet /shrug
I'm a tac captain, and I use both escorts and cruisers. I pick escorts for leveling, my NX replica to start since both the Miranda and the TOS Constitution frustrate me with their speed. I go up the escort line at each tier to tier 3 and stay in the Akira until Tier 5. I skip tier 4 because I can't stand the defiant, it's fugly.
At tier 5 I pick the assault cruiser or i'f I have ground out enought C-points for the tactical odyssey, I'll pick that one instead. Why the Odyssey? It's the most amazing looking ship in the game !
