You can never have too much, because we can almost never get enough! But I digress, a reasonable amount of customization here is adequate.

You can outfit it anyway you want that's the joy of the way Cryptic is making it. A Cruiser will have more engineering slots but will still have heaps of weapons and a huge damage control potential. I plan to run a cruiser but leaning more toward science and exploration (as per Star Trek matra)

If you want a kick ass weapons platform I would go more for the escort.

Im guessing you have never played an MMo or come here form WoW.

Customisation is a must to make all the peeps in the Universe unique.

The last thing any of us want is a crap load of people who all look the same like WoW or MXO.

If you dont like the customization options just use the randomiser option.

I just read the Ships Overview (yeah I know I am behind on postings)
From playing Champions Online I am aware that your superhero will interact with a "tailor" in order to edit the avatar's costume. However, for a ship editing its design...you should go to a drydock. If you are looking for a term better than tailor it should be a "drydock". I don't know what graphical model has been made for the player to interact with but, I think a drydock officer or drydock terminal would be better than a "tailor".

Well one thing regarding Bridge Officers, which I haven't seen answered yet...(Perhaps I'm the only one wondering this?)...Can we customize the race/look of our Boffs? I mean say for instance I want a ship loaded with nothing but Gorn, is this possible without me having to lose some 'more qualified' candidates simply for the aesthetic of it?(I.E. Can I have find a Boff with the skills I want, but make him/her a Gorn? Or are their look/race predefined with the skills?) Now this is mainly a question for recruiting purposes, since I know we can skill-up our Boffs as we ourselves skill-up, but I was just wondering how much 'appearance' customization is out there?
