I would love to get the Very Rare Neutronium armor, but it's very expensive! Do you have any other suggestions? If I get the fleet advanced escort, what do you suggest I get for the extra console slot?

There seem to be three approaches to outfitting an Odyssey.
1) Traditional cruiser beam-torp loadout (3 arrays, 1 torp, fore/aft)
2) All beams (usually all arrays)
3) Cannon cruiser
The Odyssey, like other cruisers, can mount SINGLE cannons, but DC and DHC remain out of its reach. Furthermore, although I have heard cannon Odysseys can be made to perform very well, I would advise against doing this to start with, because it takes a good bit of experience to be able to know when and how to boost the mobility of the ship to dump everything you've got, plus judicious use of the precious few tac slots you may have.
In terms of the Advanced Escort itself, I would strongly recommend getting a full set. Note the Borg's three-piece proc meaning you can replace its somewhat lackluster shield with a better one. The Omega set may be best for you in terms of hit-and-run with an escort, although the Borg and MACO have bonuses that can help mitigate some severe escort weaknesses.
For the extra console slot, you can't go wrong with more energy-type damage. Although I myself would consider slotting in another Field Generator over one of the other shield consoles, but that's just me. You could also move the Borg console to that slot and put in another eng console (probably Neutronium would be best, though a case can be made for an RCS Mk XI blue, as well). However, the prices for the high-end neutronium beyond Mk XI blue are outrageous, so don't feel too bad if you can't cough up 40 million EC to get an extra +1 defense, it's probably not really worth it, except maybe to a top-tier ultra minmaxing PvPer. Also remember if you get a good deal, a Mk XII green console is generally the same as a Mk XI blue, and you can sometimes get a Mk XII green cheaper.
