I read somewhere that I can turn Dillithium into zen! Is that true and if so, how is this accomplished?

Check for Dilithium 101 on these forums... or on the main page. It's a Dev Blog that has the information you seek.

When in game there is a small down arrow next to the mini map (should be bottom right of it), first option should be the Dilithium Exchange

You can also hit I to bring up ya inventory, hit assets tab and then exchange tab to bring up the dil-z exchange page.

also nows a good time to trade dilithium with the price being low you'll get more zen for ya dilithium.

Dilithium and Zen are incredibly versatile currencies, so learning a little about them can go a long way. A little patience and self-control can get you goodies, upgrades, etc., or some ingenuity can turn it into Energy Credits.
