I wonder, what is Your best defence against plasma torpedos?
Plainly shooting them down or using a different fancy trick?

I personally save my torpedo spreads if I'm fighting an enemy that uses them. Just target the plasma bolt and fire away...

But if I'm flying a ship capable of equipping Danube Runabout hangars, I just let them loose and set them to intercept mode. With the right DOFF they're so effective I hardly worry about them... unless the enemy lets loose its own torpedo spread to shoot them down.

Beam Fire at will, the Point Defense console that you can get from the Thunderchild Heavy Escort Refit, Cannon Scatter Volley, Tractor Beam Repulsors, all of these things will shoot down high yield plasma torpedoes.

If you don't use any of those, then your best defense is Brace For Impact and Hazard Emitters.

Actually the best option against Borg HY plasma torpedos seems to be getting aggro by the cube and make its torpedo explode in close range of the cube by just spamming Romulan hyper torpedos in its way. When the borg torpedo goes boom when hitting a hyper torpedo it also inflicts massive damage and DoT on the Borg cube, effectively giving it a taste of its own medicine. I managed to bring down a cubes hitpoints by 80% this way, destroying it in a matter of seconds

Yes. Good idea. Better to press one button, than trying to hit several in a dire situation.

Plenty of other options too. I am usually doing a mix of the others, but i DO prefer to use my torpspread and cannonscatter for the main targets.
With this console, i should be able to drink my prune juice without spilling it on my uniform.

If I see a volley of them coming my way I usually hit Evasive Manoeuvres, Beam Fire at Will, Brace for Impact, sometimes a shield buffing power if there's one available. If it still gets through, I hit Hazard Emitters to get rid of the plasma burn.

This character is why I don't play my Romulan any more. Tovan Khev is NOT my BFF! Get him off my bridge!

Go point blank range with them and use brace for impact getting ready to launch 4 x tricobalt mines and it's lights out.

My preferred strategy is being much faster than any destructible torpedo at all times.
Helps with Defense %, too.

Of course that doesn't work with every ship. With some my strategy is just taking the hit.

touch the launching ship and let him burn himself
